On your first safari, it’s easy to focus on the “big” animals and overlook the vegetation that supports them. However, returning visitors often notice subtle differences: denser grasses, fewer open areas, or lush trees. Vegetation is the backbone of African ecosystems, feeding herbivores of all sizes, which in turn sustains predators. Understanding the differences between grazing and browsing is key to appreciating how African wildlife thrives.
Grazers vs Browsers
Not all herbivores eat the same way. Grazers feed primarily on grasses, which grow rapidly and recover quickly—even after fire. Grasses grow from the base, making them resilient and abundant, especially in wetter areas. Browsers, on the other hand, feed on leaves, shoots, and twigs of trees and bushes. Although slower-growing, these plants are often more nutritious and easier to digest than grass.
Browsers typically select younger leaves and high-protein vegetation, while grazers consume large volumes of grass. Many herbivores are mixed feeders, balancing both browsing and grazing depending on availability.

How Trees Protect Themselves
Trees and shrubs have evolved clever defenses to survive herbivory. Tannins, which act as a natural deterrent, can rise from around 5% to nearly 30% in leaves under browsing pressure. Once levels exceed 10%, leaves become unpalatable and reduce the herbivore’s ability to digest them.
The Mopane tree (Colophospermum mopane) is a classic example. Abundant in Southern Africa, it has high protein content but boosts tannins at browsing height (1–2 meters) to protect itself. Neighboring trees may even sense increased browsing and adjust tannin levels in unison. This explains why herds of giraffes or kudu don’t linger in the same area continuously.
Browsers counteract tannins with protein-rich saliva, which helps neutralize the chemical and aid digestion—a fascinating adaptation visible on safari, often seen as long strands of saliva streaming from a giraffe’s mouth.

Evergreen vs Deciduous Trees
Evergreen trees retain leaves year-round, but their foliage is tougher and higher in tannins. Consequently, browsers prefer deciduous trees during the wet season when leaves are abundant. In dry periods, evergreens serve as a critical fallback. However, evergreen biomass is generally low in most parts of Africa, making rainfall and good growing conditions essential to sustain herbivore populations.
